Site Observation:
Potentially Hazardous Foods (PHFs) such as cheese slices, diced tomatoes at cook line subject to Time as a Public Health Control (TPHC) are not destroyed after 4 hours (PHF has time coding that shows product time has passed).[CA]PHF subject to Time as a Public Health Control (TPHC) shall be destroyed after 4 hours.

Written procedures are not maintained and available for food that has been prepared, cooked and refrigerated when using Time as a Public Health Control.[CA]When time only, rather than time and temperature are used as a public health control, records and documentation must be maintained.

Observed that water from the floor drain at the ware washing area draining slowly. [CA] Repair to ensure that water is adequately drained into the floor sink without causing sewage overflow.

Site Observation:
Observed clogged floor sink/grease interceptor that adversely impacts the use of necessary equipment.[CA]The food facility, or impacted areas, shall remain closed until all plumbing problems have been corrected and all contaminated surfaces have been cleaned and sanitized.
